  • No:12260 自制碱水
    *烧龙眼木灰来泡制碱水，用木灰所烧制出来的碱水为氢氧化钾，树木中所含钾的含量是钠的十倍以上，所以味甘不苦澀，用来制作面条，肉丸，碱水粽都很完美。
    *市场上买到的碱水一般都是用固体氢氧化钠来泡水合成的，味苦涩。
    *收集硬木烧成成的灰及雨水。果木，稻草灰及野苋菜灰含碱也蛮高的（稻草可能会含有残余的农药及杀虫剂），榴莲木,榴莲壳,香蕉树干，切开晒干了烧成的灰含钾量最高，泡出来的碱水质量最好。
    除了雨水，可以用蒸馏水，
    *1、把灰收集在一个小型的瓦缸内至8分满，然后倒入蒸馏水至水面超过木灰为止，然后等木灰沉淀，再补些灰及水至水超过灰面3cm就够了。把缸子封口，放置一旁3个月
    3个月后， 让碱水用纱布和一个塑料漏斗慢慢的过滤滴进瓶子里
    、收集完后，还可以二度再加一次水进入缸子内，放置一段时间后再一次进行收集碱水。剩下来的木灰用来刷锅子.
    5、第一轮收集的碱水浓度比较高，用来做肉丸及碱水粽或碱水糕。
    6、第二轮收集的碱水浓度比较低，用来做面条，用量需要用多比外买的碱水多好几倍，制面所需的水量就相对的减少。
    7、还有快的方法，就是把灰放在锅中煮一会，晾凉了过滤来用，千万别用铝锅。
